Recipe

I had a wonderful baby shower last Sunday, April 26 (which happens to be my birthday) hosted by 5 wonderful women: Karyn Gonzalez, Denyse Demel, Lauren Warner, Stephanie Davis and Rebecca York. I am still waiting to get all the pictures from the festivities before I post much more about it. But for now, here's the recipe for Texas Caviar Dip as requested by those in attendance of the shower. Thanks Denyse for this yummy recipe!

Texas Caviar

14 oz. can of black beans rinsed and drained
14 oz. can of black eyed peas rinsed and drained
11 oz. can of shoe peg corn rinsed and drained
1/2 to 1 box of cherry tomatoes quartered
small bunch of green onions chopped 4-6 of them
1 - 3 jalapeno peppers seeded and chopped
1/2 cup red onion chopped.
1 bunch of fresh cilantro chopped with stems removed
8 oz bottle of Italian salad dressing
Juice of 1 or 2 limes
May add some salt if you taste it first

Combine all vegetables. Mix salad dressing and lime juice together and pour over all of it. Cover and marinate in refrigerator at least 2 hours. Drain before serving with tortilla chips.
